Begin by rinsing and soaking 2 large alphonso mangoes in clean water for 3-4 hours. Drain all the water and dry them with a clean kitchen towel.

Peel and chop the mangoes. Add the chopped mangoes to a blender. You can also add some sugar if the mangoes are slightly tangy or sour.

Then blend the mangoes to a smooth pulp. Check the taste and add sugar if required. Add milk and mix well. The consistency should be thick.

Mix very well. Then pour in a bowl. Cover the bowl and chill in the refrigerator for 1 to 2 hours. Or you can serve straightaway in small bowls. I like it chilled so I refrigerate it.

Take the mango pulp in a serving bowl. Then add cardamom powder and saffron strands. Now garnish it with finely chopped dry fruits & dried rose petals and serve chilled with pooris or Chapati.

Tip - Mangoes have a heating quality. So to reduce this, soak mangoes in water, in a bowl for a couple of hours. Later drain all the water, wipe them dry with a kitchen towel and it's ready to use.
