Steps

Firstly, to make Sugar Syrup, in a large Kadhai, add 1 & 1/2 cups Sugar, 2 pods Cardamom and 1 cup Water

Stir and Mix well until sugar melts completely and dissolves in Water.

Now boil for 10 minutes or until the sugar syrup turns slightly sticky. We want 2 string Sugar Syrup.

Now add in some Saffron strands and mix it well.

To prepare Boondi, take 1 cup Besan (Gram flour) in a large bowl and add 1/4 tsp Saffron Food Colour into it. Mix well.

Now add in 3/4 cup Water in batches.

Mix the batter well and beat for 5 minutes. We want smooth flowing consistency..

Now add 1/4 tsp Baking Soda and mix well.

To prepare boondi, Pour the batter slowly over a skimmer or grater, when the oil is hot.

We can also use piping bag and make it with this method.

Stir occasionally until the boondi turns golden brown and crispy.

Collect all the boondi and make sure to drain off the oil completely.

Add the prepared Boondi into warm sugar syrup and dip it properly.

Cover and rest for 1 hour or overnight. Time depends on the sweetness you want.

Drain off over Colander to remove Excessive Sugar Syrup.

Finally our Meethi Boondi is ready to serve. You can make Laddoo from this too. Enjoy.
