Ingredients

  1. All to taste:
  2. Okra (thin and soft ones from indian stores)
  3. Grated coconut (optional)
  4. Sesame seeds (optional)
  5. Dry mango powder
  6. Coriander powder
  7. Cumin powder
  8. Turmeric
  9. Jaggery powder (optional)
  10. Red Chilli powder
  11. Olive oil
  12. Cilantro (optional)

Steps

  1. 1

    Remove the ends of the okra and make a small slit in the each okra being careful to not cut through completely.

  2. 2

    Mix Chilli powder, dry mango powder, turmeric, salt, cumin-coriander, jaggery powder, and 1 tablespoon oil to make the spice mix stuffing.

  3. 3

    Stuff the spice mix in each okra carefully.

  4. 4

    Coat all the okra with a little more oil and any remaining spice mix.

  5. 5

    Air fry in the airfryer 350F for 10-12 minutes until the okra have been cooked. Increase the timing to make them more crispy

  6. 6

    Finally, garnish with grated coconut, sesame seeds, cilantro and some lemon juice and serve.
