Air Fryer Healthy-ish Sweet Potato Brownie

This 1-2 person air fryer brownie is lightly sweet, chocolatety, extremely fudgey, and really quick to make. It is nearly 40% sweet potato by weight which makes them healthier, but don't overdo it!
It's best made with leftover baked sweet potato. I haven't tried with steamed or microwaved yet but I'm sure it's possible.
Also if you want to use an oven just bake it for the same time, and don't forgot to preheat! 350F for 20 min.

Steps

Mash 120g of baked sweet potatoes (with a fork is good)

Mash in 35g brown sugar, 55g melted butter, a pinch of salt, and a dash of vanilla extract.

Add 25g of cocoa powder and mash it in to remove clumps

Add 45g all-purpose flour and 1/2 teaspoon baking powder. Use a spatula to help get all the dry bits off the sides. Combine until there are no more dry bits

(Optional) Fold in however many choco chips/chunks you want

Line a tin that fits in your air fryer with parchment paper. Just push it in, no need for fancy cutting. Drop the batter in and spread it out with your spatula

(Optional) Sprinkle some dark choco chips or chunks on top and push them in a little.

Air-fry on the roast setting or any bake-equivalent setting for 20 min at 350F.

Carefully take your brownie out and let it cool completely. Feel free to pop it in the fridge if you want it a firmer texture. Enjoy!!
