My wife told me she's not going to cook today, you cook anything. My immediate and easiest thought was a simple chicken curry, as I started doing it kept improvising until it came out lip-smacking.

Dry roast the red chilies and cashews, grind coarse in a mixer, add the tomatoes, and grind it to a fine paste and keep aside.

Add finely chopped onions to 3 tablespoons of vegetable oil in a pan and cook till translucent.

Add ginger-garlic paste and stir, add turmeric, chili powder, coriander powder add a splash of water, and fry in low flame for 2 to 3 minutes.

Add Kasuri Methi and mix thoroughly, simmer for 2 minutes, garnish with fresh coriander and Serve.

Add the chicken and mix thoroughly, Fry in medium heat for 5 to 6 minutes till chicken is browned. Add salt and mix well. Add the tomato paste, and mix well. Fry 5 to 6 minutes in medium heat till oil separates. Cook 1 minute on low heat, add 200ml water, cover and cook for 15 minutes.
