Melt the chocolate using a double boiler.

Separate the egg whites from the yolks. Beat the egg whites with a pinch of salt until stiff peaks form.

Gently mix the yolks into the slightly cooled chocolate.

Add the zest of the lime and the grated ginger. If you have a microplane, it's perfect for this step.

Carefully fold the egg whites into the chocolate-yolk mixture. Chill in the refrigerator for at least 4 hours, or overnight for best results.
