Steps

Sieve the gram flour/besan in a bowl and mix powdered sugar with gram flour. Add baking powder and cardamom powder and mix everything properly.

Mix ghee in batches to gram flour mixture and make dough. Please ensure dough is neither dry nor loose.

Put a heavy pan on the gas stove and keep the flame on low to medium. Cover the tawa with a lid to preheat it for 10 minutes.

Now take one more tawa which should fix in the pan. Place a butter paper on the second tawa and grease it with ghee.

Take small balls of dough and shape them in form of biscuits. Garnish with pistachios. Put all nan khatai on butter paper.

Put this 2nd tawa on the heated pan and keep the flame on low. Now cover it with a lid.

Check the nan khatai after 15 minutes and if those are baked then transfer to plate else cook for 2 more minutes.

Once baked let them cool down and store them in an airtight box.
