Ingredients

  • 10# Ground Beef
  • 10# Italian sausage
  • 9 cupsbreadcrumbs
  • 2 cupsketchup
  • 1 cupCreole mustard
  • 10whole eggs
  • 1/3 cuporegano
  • 1/3 Cupsalt
  • 1/3 Cuppepper
  • 1 cupCherry peppers diced
  • 3 cupsOnion diced
  • 2 cupsCelery diced
  • 2 cupsParmesan shredded

Steps

  1. 1

    Sweat the onions, celery, and cherry peppers. Cool down.

  2. 2

    Mix all ingredients in the large mixer.

  3. 3

    Divide into six vacuum seal bags and seal.

  4. 4

    Roll into 2 ounce meatballs when needed
