Ingredients

  1. Boiling chole
  2. 1 cupchole (soaked over night)
  3. 2black cardamom
  4. 1tea bag
  5. as per tasteSalt
  6. Masale for chole
  7. 1 tbsp kashmiri lal mirch powder
  8. 1 tspcoriander powder
  9. 1/2 tspchaat masala
  10. 1 tspchole masala
  11. 1/4-1/2 tspgaram masala
  12. 1/2 tsp or as per taste black salt
  13. 1 tspanar dana (I didn't have)
  14. as per tasteSalt
  15. As neededFresh coriander leaves
  16. 1 tspTamarind pulp
  17. Pindi chole tadka
  18. 1 tspoil
  19. 1-2 tspghee
  20. 1 tspajwsin
  21. 4-5 clovegarlic
  22. 2 inchlong ginger
  23. 4-5green chili
  24. 1/2 tspkashmiri lal mirch

Cooking Instructions

    Soak chole over night then boil them with salt, 2 black cardamom and tea bag. Wait for 3-4 whistle. (It's depends on chole quality) sometimes it take more time so once we can check after 3-4 whistle if still need we can set for more whistle.

    Now remove extra water from chole & keep aside that chole water, we may need that later. Transfer chole into kadayi Or cooker (I used same cooker, in which I kept chole for whistle)

    Now add add masala from masala section and mix them cook them for 2 minutes (without adding water) and add fresh coriander leaves.

    Now add tamarind pulp and mix and cook it for two minutes. If you feel water is needed add chole water which we used for boiling the water.

    Now chop the garlic, ginger, green chilli. In pan add oil + ghee add ajwain. Cook it for 30 second.

    Now add ginger, garlic then cook for some time, later add green chilli. And cook it for 1-2 minutes.

    Now add kashmiri lal mirch powder and give tadka in chole.

    Pindi chole us ready to serve, I served with Aloo-kulcha.
