Ingredients

5 portions
  • 2 lStock. Ideally beef stock
  • 1.5 kgonion (white or mixed with other kinds)
  • To tasteGruyere cheese
  • 3gloves of garlic
  • Bay leaves, thyme, salt and pepper
  • Sugar
  • 200 mldry white wine

Steps

    Make a stock. Ideally beef stock, but other kinds can be used as well.

  2. 2

    Cut onions into strips. Don't get scared by the huge volume of the onion. It will get smaller as you caramelize it. Pan-fry it using olive oil in the pot, stir it often (~20min).

    Add a few spoons of sugar to ease caramelization and cook until onions get brown.

    Add smashed garlic, seasonings and pour in the wine. Let it simmer for a couple more minutes before adding the stock.

    Serve with grated gruyere cheese on top.
