In this case I've made turkey stock and I've added some meat from turkey bits. Originally this soup is without meat.

Make a stock. Ideally beef stock, but other kinds can be used as well.

Cut onions into strips. Don't get scared by the huge volume of the onion. It will get smaller as you caramelize it. Pan-fry it using olive oil in the pot, stir it often (~20min).

Add a few spoons of sugar to ease caramelization and cook until onions get brown.

Add smashed garlic, seasonings and pour in the wine. Let it simmer for a couple more minutes before adding the stock.

Serve with grated gruyere cheese on top.
