Mithi or sweet boondi is a very famous sweet from India. This boondi is prepared with chickpea flour and cardamon infused sugar syrup. Can be made into ladoos for special occasions.

Mithi or sweet boondi is a very famous sweet from India. This boondi is prepared with chickpea flour and cardamon infused sugar syrup. Can be made into ladoos for special occasions.
Steps

Add oil and ghee in equal portions in a kadhai and start heating. We can use all of ghee or all oil as well.

In a separate pan, start making the sugar syrup by adding sugar and water. Cook on high heat. Once it comes to a boil, add milk to remove the impurities from sugar. You will see a grey froth above the sugar water. Discard it and add lemon juice. Lemon juice will help to avoid crystalization when the syrup cools down. Now add the crushed cardamons and let the syrup cook well. When the syrups thicken a bit, check for one thread consistency.

Whisk together the chickpea flour and 3/4 cup water to form a nice flowing batter. Add baking powder and mix again.

Use a boondi maker to drop the boondis in the oil.
I use a strainer(jhara called in Hindi) to drop the boondis. - 5
Fry in little portions and do not overcrowd the batter so that you get nice shaped boondis.

Strain the boondis and add to the sugar syrup directly. After all the boondis are done, cover and keep the boondis to soak all the sugar syrup.
Garnish the with some nuts and more cardamom powder.
