Sweet Potato, Plum and Kale Salad - can be vegan

Delicious salad with great flavours and textures.
Served here with some feta. Sheep/ goats’ cheese is a good addition if you’re not vegan.
Some toasted pumpkin seeds or flaked almonds go well with it too.

Delicious salad with great flavours and textures.
Served here with some feta. Sheep/ goats’ cheese is a good addition if you’re not vegan.

Preheat oven to 200c.

Put the sweet potato on a baking tray, drizzle with olive oil and sprinkle with salt. Roast for about 20 mins until tender.

For the plums: toss them in the coconut oil and balsamic. Put them on a lined baking tray and roast for 10-15 mins until they caramelise.

Prepare the kale: remove stems, shred into ribbons and then massage with the lemon juice + a drizzle or two of olive oil + a pinch of salt for a minute or two. This makes the kale tender and a lot nicer to eat!

Put the kale in a serving bowl, add the sweet potato and plums. Grate the lemon zest on top. Season and enjoy 😋
