In a large bowl or dish, add the couscous and pour in enough water to completely cover it. Drain off the excess water so the couscous is just damp, then let it sit to drain fully. Sprinkle with a little vegetable oil and place in a steamer basket to steam. Once steamed, transfer to a bowl, sprinkle with water, and add the butter, pre-steamed raisins, and a pinch of salt. Steam again for a second time.

After the second steaming, add sugar to taste and mix well with the couscous. Serve on plates and garnish with nuts.
