Chill the bowl in which the pie crust dough is to be prepared. Use frozen and cubed butter, this is very important. Shift the flour, add sugar,add in the frozen butter cubes and with the help of your finger tips mix such that you get bread crumbs like dough. You can even pulse the mixture for few seconds in a mixer or food processor but just for say 10 to 15 sec that to with pulse button and you get bread crumbs like mixture.

Now add in ice cold water. First add one tbsp then try to combine it,then add the other tbsp.Mix to get a clumpy dough. If you think 1/2 tbsp more water is required to make a dough add it, else just rub the dough and shape and divide it in two parts -one big and one small (3/4 and 1/4),cling wrap them and keep the dough in the fridge for 30 minutes.

Now prepare the filling.Peel n chop the apples and sprinkle some lemon juice so that they remain white. Add in both the sugars, both the powders, flour and leave it covered for 10 to 15 min. All the sugar will release all water. Seive this and now in a pan, add butter, this seived Sugar water and cook till it thickens, add this to the apples and mix.

Now take out the dough mixture. It will be firm because of butter,sprinkle some flour on the platform and roll this tight dough thin,within few minutes it will become soft.Now cut them in a size little bigger than the size of the muffin tin. Grease your muffin tray, lay down these pie dough & fill them with apple mixture. Preaheat the oven at 180 degree Celsius for 10 mins.

Now take out the other 1/4 piece of dough, roll it as the first one was done.Cut them in long strips with the help of little water stick them on top of the muffin pie. Press them and seal the edges.

Now milk wash them with the help of brush and bake them at 180 degree Celsius for thirty to thirty five minutes. Or till they turn golden brown. Cool them and very carefully demould them. mine gave a rustic look as in some pies a little sugar oozed out and caramalzed. But that tasted superb

Notes
Using chilled bowl, chilled water and frozen butter is very important step to keep in mind and making the dough with tips of finger and not with palms is very important it will not allow butter in the dough to melt and will make it very crusty as the pies are!!!
