Our family famous dialogue is jodhpur k jialay hain😎😍.we call it malida.but in rajhistan it is called magahd chorma.my grind parents called it maghad.
My husband' fav too.my husband loves my mother's malida taste.

Steps

Take 1.75 kg flour in a open large tray.leave 0.25 flour in a pack

Stiff the flour.after stiffing add 1 and half cup desi ghee in it.

Mix flour in ghee like kneading

Add half cup of milk with half cup of water in it

Make a semi dough type mixtute.cover it.leave it over night or 7 to 8 hours at room temperature like this

In morning open the flour by rubbing both palms

Sieving is the next step by a large hole chalni

Sieve it and press/rub the leftover lumps between your plams until they've crumbled. keep repeating this process I'll the moisture is reduced to fine powder

Put the whloe flour in a large frying pan or karahi for sikaie on a medium flame

Fry it until it changes its colour light foun to darker tone

Fry desi ghee in another pan.put some crushed elaichi in it fry for 5 mins.add 0.25 of remaining flour in it.fry it on medium flame until it changed its darker tone

After frying add this to the cool whole fried flour and mix it well

Add crushed sugar and nuts in it

Ready to serve.store it in air tight jar.enjoy it with tea or hot milk😊
