The Black Rice, Purple Kheer/Pudding

This traditional, Purple kheer is made with Manipuri Black Rice called Chak-Hao. This is my mother's favorite pudding. She learned from her Mamipuri college and then began to cook for us as this rice is nutrients rich and very tasty.
Black rice is also known as forbidden rice or purple rice has immense nutritional and health benefits. This rice has antioxidants, natural dexotifier, a good source of fiber, preventing the risk of diabetes, preventing the risk of obesity, richer protein content, and better heart health. It is one of the healthiest varieties of Rice, packed with a wide array of Nutrients. Black rice has a very unique flavor and is Nutty in taste and texture. The rice is aromatic and flavorful.
Black Rice takes a longer time to cook than the other normal rice. The rice is soaked for a couple of hours or overnight and then cooked. Some even pressure cooks the rice first before making the recipe to make it faster. But here I have soaked the rice overnight and cooked it like the way my mother cooks as Manipuri cook normal rice.

Wash black rice 3 -4 times and soak overnight or 4 hours. Drain water.

Add 4 cups of water and cook on a heavy-bottomed pan. I cooked in rice cooker.

Bring rice to boil and then simmer on low flame till softened. Stir frequently.

Black rice is harder than other rice, it takes 30 minutes to become soft.

When rice is tender and boiled milk, cardamom, bay leaf, and chopped almonds.

Bring to boil. Mix Salta and sugar and continue to whisk.

The kheer/pudding turns purple color and creamy consistency. Transfer to a bowl and serve at room temperature or cold.
