Quick & Delicious Cold Pasta with Canned Tomatoes

I used to make this with fresh tomatoes, but cutting them with a knife was tiresome. So I started using canned diced tomatoes (purchased at a wholesale supermarket for 68 yen per 500 g). Not only was it cheaper, but it had a richer, more delicious taste No need to use a knife, so it's easy! This is now my go-to dish at home.

No need to use a knife! Just mix everything together; it's really simple Using diced tomatoes instead of whole lets you skip the step of crushing them, keeping this recipe simple and easy. Recipe by Oshirikkyuu

Ingredients

2 servings
  • 200 gramsPasta
  • 1/2 can★ Canned diced tomatoes (or canned whole tomatoes)
  • 2 tbsp★ Olive oil
  • 1 tbsp★ Lemon juice (you can use vinegar as a substitute)
  • 2 cm★ Prepared garlic paste in tube (or 1 teaspoon grated fresh garlic)
  • 1★ Salt and pepper
  • 2leaves ★ Basil (if available)
  • 1Cured ham (or roast ham)
  • 1for garnish, if available Pea shoots

Steps

  1. 1

    While the pasta is boiling add the ★ ingredients to a bowl, mix, and chill in the refrigerator. (Or, if you'd been storing your canned diced tomatoes at room temperature, chill in the freezer.)

    For the ★ sauce, the lemon juice is optional since the tomatoes are acidic on their own.

  3. 3

    You could also finely chop the basil and then sprinkle it on top later. (I don't like the taste of fresh basil so I just use it as a bit of flavoring. You don't have to add it.)

    Rinse off the pasta in cold water to cool it off, then chill in ice water. Once the pasta is chilled, remove the ice and drain.

  5. 5

    Transfer the pasta to a serving dish and top with the ★ sauce. If you're feeling lazy, you can just add the pasta to the bowl of sauce.

  6. 6

    Top with cured ham and pea shoots for garnish. It's done.

    If you don't like cured ham you can substitute with canned tuna, or roast ham, although you'll need a knife for that.
