Cheesy Mexican Corn Bread

Native Americans have been using ground Corn before Europeans for making cornbread for thousands of years. It has been a popular one in the Southern regions of America where Corn is considered as gold. This version of Corn Bread is a modified one with the addition of Cheese and Veggies. It tastes so very heavenly and can be very well eaten on its own. Green chilies render a little sharp touch to the whole Bread and can be very well omitted. Jalapenos can be replaced with our local Green Chillies as I did. Try this awesome Bread for your families and relish its enticing flavor and texture.

Combine both the flours with baking powder in a wide mixing bowl at first.

Beat Eggs with Sugar and Butter. Pour in the Buttermilk now along with Salt as desired.

Add this liquid mix to the flour mix and add the Veggies now. Bring all that together carefully taking enough care not to over mix. Lastly, stir in the Mozzarella Cheese. The batter would be slightly lumpy. Pour this batter into the baking dish and pop it in the oven for 25 to 30 minutes.

Soft and super spongy cornbread is ready to be served. Enjoy it with your family and friends on its own or as an accompaniment with your favorite Tea or Coffee.
