In a large vessel add soya chunks, salt and sufficient water and boil for about 8 to 10 minutes.

When the soya chunks are soft, drain out and rinse the soya chunks in cold water.

Squeeze out the water from the soya chunks and transfer to a large bowl. To it, add curd, ginger garlic paste, kashmiri red chilli powder, turmeric powder, garam masala powder, coriander powder, cumin powder, kasuri methi and salt. Mix it well to combine.

Add green peas. This is optional. Mix well. Cover and set aside to marinate for 30 minutes.

To prepare cashew paste, soak cashewnuts in hot water and blend to a smooth paste.

Heat oil in a kadhai. Add bay leaves, cloves, cardamoms, cinnamon stick and cumin seeds. Saute on low flame for few seconds. Add the finely chopped onions and saute on medium flame until the onions turn golden brown.

Reduce the flame to low and add turmeric powder, kashmiri red chilli powder, coriander powder and salt and saute for few seconds.

Now add the marinated soya chunks and saute for about 2 to 3 minutes.

Next add the tomato puree. Mix well and cook until the gravy thickens.

Add the cashew paste. Mix well and cover and cook for about 10 minutes or until the oil separates and appears at the surface and the soya chunks are cooked well. You can adjust the consistency of the gravy by adding water as required.

Garnish with coriander leaves. Mix well and off the flame.

Spicy and Delicious Soya Chunks Gravy is ready. Serve it hot with rotis, parathas or naan and curd raita alongwith with some white onions.
