I made some scones to pair with my homemade lemon curd. These can be prepared using any type of nuts, but I used pecans in mine.

I made some scones to pair with my homemade lemon curd. These can be prepared using any type of nuts, but I used pecans in mine.

Preheat oven to 400°F

Whisk the egg and milk together in a small bowl, then set aside. In a medium mixing bowl, combine the flour, salt, sugar, cinnamon, and baking powder. After the ingredients are whisked together, dump the contents onto a clean cutting board.

Cut 6 tbsp of butter into the flour mixture, and add 1-2 tbsp if it is insufficient. The butter pieces should be quite small once you're done.

In the center of the flour mixture, create a large well for the egg mixture to pour in. Be careful to pour it in only a little at a time and mixing it into the dough. If it's poured in all at once, it may spill everywhere. Once the flour is mostly incorporated, add the nuts little by little after kneading for a few minutes.

Once the nuts are thoroughly incorporated, make a ball shape and flatten the dough to be no less than ½". Cut the dough into 8 pieces by cutting it lengthwise 4x with a knife.

Bake on a sheet pan for 12 mins or until the bottoms are golden brown.

These scones are most enjoyable with a bit of butter and lemon curd warmed up in the microwave for 30 secs. Enjoy!
