Peel potatoes and chop them into 1 inch cubes, then put them into a pot. Fill with cold water until potatoes are covered. Boil on high heat until water comes to a boil and then simmer until tender.

While potatoes are boiling, fry bacon strips in a pan until red and crispy. Remove bacon from pan onto paper towels to remove excess fat. Once cooled, slice bacon into 1 inch pieces.

Chop onion into 1 inch pieces and sautee them in the bacon fat until lightly browned and see through.

Combine potatoes, onion and bacon in a bowl and place into the fridge to cool.

Peel and chop the apple into 1 inch cubes.

Once the potato mixture is cooled, mix in the apples and sauce. Mix well to evenly distribute the sauce. Do not be afraid of the potatoes breaking apart as that will contribute to the texture of the sauce.

Garnish with chopped green onions before serving.
