Steps

After the baingan is cooked, peel its skin off completely.
Then mash it very well.

Heat up 2 tbsp oil, add cumin seeds, onion and saute until onions turn translucent.
Then add chopped garlic and green chillies and cook for a minute.

Add garam masala, green chillies, mix and cook for 2 more minutes.
Add mashed eggplant, salt and mix very well.

Add roasted peanut powder, mix, cover and cook for 5 to 6 minutes.
Garnish with finely chopped coriander leaves!
