I wanted to create a simple rice bowl with vegetables loaded with calcium, vitamin C, and beta-carotene.

If using pork belly in Step 2, you may not need to add any oil. Add only if needed.
Komatsuna has vitamin C but since it's destroyed when heated, try to shorten the cooking time to the extent possible. Recipe by Kenkunno mama

Ingredients

2 servings
  • 2 largebowls' worth Cooked rice (warm)
  • 80 gramsPork, thinly sliced (belly, pork bits)
  • 1/2 bunchKomatsuna
  • 200 ml☆Dashi stock
  • 1 1/2 tbsp☆Soy sauce
  • 1 tbsp☆Sake
  • 1 dash☆Salt
  • 1 tbspKatakuriko
  • 1 tspSesame oil

Steps

  1. 1

    Cut the pork and komatsuna into 2cm strips.

  2. 2

    Place the pork in a pan and lightly fry (add oil, if necessary). Add the komatsuna stems and fry until tender.

  3. 3

    Add the komatsuna leaves and the ☆ ingredients. Skim any scum from the surface. Add a slurry of katakuriko dissolved in water to thicken.

  4. 4

    Drizzle on sesame oil and it's done.
