Rinse the gizzard in vinegar water to remove any smell

Place on fire and season with onion, curry powder, salt and seasoning

Add garlic and ginger (optional) and cover to cook until tender

Slice and cut plantain and season with little salt and fry in vegetable oil

Place a clean pan on fire and add little vegetable oil

Pour in the tomato mix and fry the add the scent leaves

Then add the boiled gizzard and stir fry for a bit

Add the fried plantain and stir
Taste for seasoning and adjust if needed - 9
