Artichoke Spinach Dip

Whenever I see this dish at a restaurant, I always order it. I wanted to make my own at home, so I looked through lots of recipes, but I couldn't find one that I liked. I used the ratio or ingredients that I liked, and I rearranged them to make this recipe to suit my taste.
The key is to sauté the onion and simmer in the consommé. Baking the cheese in the oven until it turns golden brown, mixing it, and sprinkling the cheese on top, then baking it again are also the keys. Baking one time is not good enough.
It's a little bit troublesome, but you can make rich and delicious dip. If it's hard to get canned artichokes in Japan, just use spinach. It's also tasty! Avocado might be good in this dish as well. Recipe by stickybandaids

Boil the spinach and cut into small pieces. Rip off the artichokes, wipe off the excess water, and chop into small pieces as well. Mince the onion.

Heat butter or oil in a pot, and sauté the onion. Please be careful not to burn it. I usually microwave my chopped onions ahead of time to speed up the process.

When the onion starts to become translucent, add in the flour, and mix over low heat until they are well blended. Add the water and consommé and simmer until the mixture thickens. Simmer over very low heat so that it won't get burned!

Add in the ○ ingredients, and sprinkle with salt to adjust the flavour. Add the spinach while separating, and add the artichoke as well.

Pour the mixture into a dish, and sprinkle with a small amount of cheese. Bake in the oven for about 15-20 minutes at 350°Funtil the cheese is a little bit browned.

Remove from the oven, mix with a spoon while breaking through the cheese. Sprinkle with cheese again, and bake until the surface turns golden brown.
