My Easiest Ever Curried Fish Cakes

This is a variation of my original tuna fish cake recipe, except it uses butter beans instead of mashed potatoes. I wanted to make an even quicker fuss free version that can be put together and cooked within minutes. These are a tasty meal for all the family and you can adjust the amount of spice used according to your own palette.

My Easiest Ever Curried Fish Cakes
This is a variation of my original tuna fish cake recipe, except it uses butter beans instead of mashed potatoes. Add oil to a skillet or non-stick frying pan over a medium heat. As it heats up drain off the butter beans and add to large bowl. Mash roughly using a potato masher. Add in the tuna. Mix together. Season well with salt and pepper.

Add the curry powder, chilli flakes and ground coriander then crack in the egg. Stir through with a fork and mash futher using the back of it until the ingredients are nicely combined. The mixture may seem a bit wet at first but keep working it and it'll eventually thicken and come together.

Scatter the golden breadcrumbs over a dinner plate. Wet your hands and divide the mixture into 4 balls. Form into fat round patties and coat them well in the bread crumbs. Re-form them once coated to neaten them up a bit. Don't make the patties too thin, as they'll fall apart easily.

Place into the pan and fry gently until golden brown on each side. Use a spatula to quickly and carefully flip them so they don't fall apart.

Serve up and enjoy, I like to eat them on a bed of mixed salad leaves with a dollop of sriracha mayo and either mango or plum chutney (check out my plum chutney recipe for more details). :)
