Today I am sharing with you all a simple & yummy breakfast recipe - Vegetable Paniyaram, a South Indian breakfast made from idli/dosa batter and known as kuzhi Paniyaram in Tamil. I usually make it for my breakfast which is loved by all.

Hello friends,
Today I am sharing with you all a simple & yummy breakfast recipe - Vegetable Paniyaram, a South Indian breakfast made from idli/dosa batter and known as kuzhi Paniyaram in Tamil. I usually make it for my breakfast which is loved by all.

Heat oil in a pan. Add mustard cumin seeds, chana dal urad dal. Once it turns light brown add the onions & green chillies.
Saute for 2 minutes. Add required salt & ginger garlic paste. Saute till the raw smell goes off. - 2
Add grated carrot and beans. Stir for few minutes on high flame. Add a splash of water to cook the veggies. Once done, add chopped coriander leaves.

Add this mixture to the idli batter. Stir well till it combines altogether. Heat the Paniyaram pan on the stove. Add a few drops of oil in each mould.

Pour the spiced paniyaram batter in the moulds up to ¾ of the volume. Cover & cook for a few minutes on low to medium heat for 3 to 4 minutes.

When you see the sides have become golden then turn over carefully with a spoon and let the other side cook until golden.
You can also add some more oil if required while cooking the other side.
When the paniyarams are golden from all sides, remove them. Cook in batches this way. - 6
You can serve kuzhi paniyaram hot or warm with coconut chutney or peanut chutney. They make for a good breakfast or evening snack. These are best enjoyed when eaten hot or warm.
