Potato, Carrot, and Tuna Patties

I wanted to make use of some potatoes that had been sitting in my fridge, so I thought of making potato patties. I also noticed some carrots that were getting old, and remembered a recipe I once saw where they combined the vegetables and people really liked it, so I made my own version!

Boil the washed, peeled, and cubed potatoes and carrots in water with salt and 2 bay leaves. Drain and place them in a bowl with chopped onion, salt, pepper, and chicken bouillon powder.

Drain the tuna and add it to the bowl.

Use a potato masher to mash everything together until you have a dough-like mixture.

Leave some small pieces of vegetables for texture.

Add grated Parmesan cheese to taste—I like to use a lot—and mix well.

Heat a little coconut oil in a skillet over medium heat.

Shape the mixture into patties with your hands. Spread flour on a plate and coat each patty with flour on all sides.

Turn the patties to coat them evenly with flour.

Place as many patties as will fit in the skillet without crowding.

Flip the patties when they are golden brown and remove them with a spatula.

Drain on paper towels and they're ready! I like to serve them with a lettuce salad. Hope you enjoy them!
