Ingredients

  • Grilled salmon
  • 1Salmon fillet(250-300 g)
  • Salt and pepper
  • 1 tspVegetable oil
  • 1 tspUnsalted butter
  • Side dish: Stir-fried mushroom with Thai basil
  • 1 cupWhite button mushroom, sliced
  • 10-15Thai basil leafs
  • 1 tbspOyster sauce
  • 1 tspFish sauce
  • 3Garlic cloves, smashed
  • 5Thai chilli, smashed (optinal, highly-recommended for those who love spicy food)

    Season skin side salmon with salt and pepper

    For the grilled salmon: bring out the non-stick saucepan. Heat the vegetable oil with high heat. Cook the skin side salmon for 4-6 min or until the salmon flesh become light in color, then flip to the other side. Add butter. Cook for another 1-2 min. Transfer to a plate. Do not clean the saucepan.

    For the side dish: prepare all the ingredients. Heat the saucepan and leftover oil with high heat. Sauté the mushroom until tender and brown. Add Thai chilli and garlic cloves. Stir-fry for 1 min. Season with oyster sauce and fish sauce. Finally, add Thai basil. Mix well for only 10-15 sec and turn off the heat. Transfer to a plate.

    You can serve with rice, fried egg or scrambled egg.
