Peel the carrots and finely chop them using a food chopper or food processor. Transfer to a bowl, add the Parmesan cheese, breadcrumbs, and a pinch of salt. Add the chopped onion and eggs, then mix until well combined.

Shape the mixture into balls and place them on a baking sheet lined with parchment paper. Lightly spray or brush the parchment with oil, then arrange the fritters on top.

Bake in a preheated oven at 350°F (180°C) for 20 to 25 minutes. Enjoy!
