I just love a great salmon dish. This spinach and cheese stuffed salmon is so easy to make, but so fulfilling!

Ingredients

  1. Fresh salmon filet
  2. 2 cupsfresh or frozen spinach
  3. 2 tbscream cheese (room temperature)
  4. 1/2 tspblack pepper
  5. 1/2 tspItalian seasoning
  6. 1/2 tspred pepper flakes (optional)
  7. 1/2 tspgarlic powder
  8. 1/2 tspold bay seasoning
  9. 1 tspCajun seasoning
  10. 1 tspbrown sugar
  11. Minced garlic
  12. 1/2 stickbutter
  13. Olive oil

Cooking Instructions

    Heat skillet to medium-high, and add olive oil. Once oil is hot add minced garlic, and cook for 30-60 seconds.

    Add fresh spinach, and cook until wilted.
    In a large bowl add cream cheese, black pepper, Cajun seasoning, red pepper flakes, if using, and cooked spinach. Mix well. Refrigerate until ready to use.

    Season salmon with old bay, garlic powder, Italian seasoning, and brown sugar.

    Cut salmon filet lengthwise down the middle making sure not to cut through. Be gentle.

    Using a spoon, start filling your salmon with the spinach, and cheese mixture.

    Add olive oil to a medium-high skillet. Sear salmon skin side up for 4 minutes. Flip salmon and sear the other side for an additional 4 minutes. Add 1/2 a stick of butter, and baste by tilting the skillet, and spooning butter over salmon filet. Cook for an additional 3-4 minutes.

    Carefully remove salmon from skillet. Serve with mashed potatoes, or rice. Enjoy!
