When making tonkatsu for my family, I made myself vegetarian deep-fried tofu as a substitute.

Place a weight on top of the tofu to drain, then slice into 3 mm thick slabs.

Lightly season with salt and pepper, then coat first in flour, then whisked egg, and finally in panko.

Deep fry in medium-hot oil until nicely browned, then drain excess oil.

Serve with finely shredded cabbage, Japanese mustard, sauce, soy sauce, or mentsuyu.
