
Canga (Portuguese Chicken Soup)
Steps

Add water into soup pot at high heat to boil, lid closed

Prepare onion by removing bad layers and rinsing. cut in half and add to pot

Prepare and rinse chicken breast, add to pot once boiling and lower heat to medium, lid off

Remove foam on the surface of the soup

Take chicken out once cooked and cut into finger thick cubes

Take onion out of pot and discard

Add salt then chicken broth to pot

Add cut chicken pieces to pot and rice

Taste soup to see if salt needs to be added

Once rice is almost cooked you can prepare the egg yolks

With egg yolks in a mug, add the soup from the pot slowly, one spoon at a time and mix the egg. After adding about 5 spoons the egg should be cooked and you can add more water into the mug then poor into pot. This is so the egg doesn't get clumpy in the soup

Let cook on medium and taste until rice is cooked
