Ingredients

50 minutes
4 servings
  • 3 cupsleftover Mutton Kadahi Masala
  • 3 cupsBasmati Rice
  • 1 cupCurd
  • 2 cupsfried Onions
  • FOR COOKING RICE-
  • 2 tspSalt
  • 4-5Green Chillies
  • 10Peppercorns
  • 1 tspCaraway Seeds or Shahjeera
  • 3Cardamom pods
  • 5-6Cloves
  • 1" Cinnamon stick
  • 3 tbspchopped Coriander Leaves
  • 3 tbspchopped Mint Leaves
  • To sprinkle on top-
  • 4-5Lemon wedges
  • 1 tbspGhee
  • 1/2 tspGaram Masala
  • 2-3 pinchesSaffron food colour

Steps

50 minutes
  1. 1

    Soak rice for almost 20 minutes keeping the water for boiling in a pot. Add all the whole masalas to it along with the chopped mint and the coriander leaves along with salt.

    Cook rice al dente and drain. Add the slit green chillies and the curd along with the deep fried onions to the leftover kadahi masala and mix well. You can add red chilli powder too but be careful about it as it is already added to the leftover gravy.

    Do the taste test here and if required add some salt. Mix well and arrange at the bottom of the vessel in which biryani is to be cooked on dum (slow cooking). Add rice on top. Garnish with pure ghee, some fried onions and sprinkle food colouring and garam masala too.

    Slow cook well covered with an aluminium foil for about 20-25 minutes on low heat. Serve hot with any raita of your choice.
