Usually, in Chinese restaurants, this dish is made with Chinese broccoli, but now I'm trying it with water spinach, which is easier to find.

Cooking Instructions

Fry the garlic until just yellow, not brown, then set aside.

Wash the water spinach leaves, drain until dry, and slice lengthwise (to make them long and curly). Once dry, fry the water spinach. It's crispy when the oil stops sizzling. Remove and set aside.

Sauté the shallots, chilies, and green onion. Add sugar, salt, pepper, and seasoning. Sauté until cooked.

Add the fried water spinach, stir briefly, then add the fried garlic. Turn off the heat while stirring.
