Ingredients

2 servings
  1. Meatballs
  2. 1/2 lbground beef 80/20
  3. 1/4quick cooking oats
  4. 1egg
  5. Salt & pepper
  6. Soup
  7. 3mini sweet bell peppers, finely diced
  8. 1/2sweet onion, finely diced
  9. 2 clovesgarlic, finely diced
  10. 1 cupmed. diced carrots
  11. 2 stalksdiced celery
  12. 1large med. diced russet potato
  13. 1/2 cupspinach
  14. 5 cupsbeef broth/stock
  15. Salt & pepper
  16. 1 tspred pepper flakes
  17. 1 tspItalian seasoning

Cooking Instructions

    Mix meatballs, form small walnut sized balls. Bake 375° for 15 minutes.

    Meanwhile. Saute onions and peppers. When fragrant and starting to caramelize, add garlic. Saute til garlic softens.

    Add carrots, celery, potatoes, meatballs, spices and stock.

  4. 4

    Bring to a boil. Reduce heat to low and simmer 20 minutes. Til carrots and potatoes are cooked through. Add spinach at the very end.

    Serve with crusty bread

Living up in the mountains, not always having the gas, time, or best weather conditions to get to town for groceries. We run out of things quickly and I have to use what I have. Though I now have a stove and oven, many of my recipes here were from when I didnt. I've had to get quite creative, and find other ways to cook. Like in a toaster oven and an electric skillet. I thought if anyone else has my same issues it'd be great to share my simple minimalist recipes. And find some great ones too.
