Soup season is here! We love soups in our house. Using frozen meatballs makes this a really quick satisfying meal. Make your own meatballs and use them instead, cook first, then add. Enjoy!

Ingredients

  1. soup
  2. 14 ozbag frozen prepared meatballs but thawed.
  3. 1 tspolive oil, extra virgin
  4. 2 cloveminced garlic
  5. 1 cuppearl onions
  6. 8 ozditalli pasta, any small pasta will do
  7. 1/2 tspsalt for pasta water
  8. 8 cupbeef broth
  9. 1/4 tspsalt
  10. 1/4 tspblack pepper
  11. 6 cupkale
  12. 1/4 cupasiago cheese, grated

Cooking Instructions

    Prepare pasta in a large pot of boiling water with 1/2 teaspoon of salt added. Cook 10-12 minutes until tender. Drain and set aside.

    In a large stock pot on medium heat add oil.

    Saute garlic for 45 seconds. Don't brown.

  4. 4

    Add in pearl onions and meatballs.

  5. 5

    Cook for 3 minutes.

    Add in broth, salt and pepper.

  7. 7

    Turn heat up to high and bring to a low boil. Now turn heat back to a simmer and simmer soup for 15 minutes.

    Add in kale and cover. Cook 10 minutes until kale wilts down and softens some.

    To serve, place 1/4 of pasta in a soup bowl.

    Laddle soup over pasta. This keeps pasta from absorbing too much liquid, becoming mushy.

    Sprinkle cheese over each serving.
