Spicy Indian One Pot Curry Spicy Indian One Pot Curry
This dish was one of the first complicated things I'd tried in my kitchen. I've always loved beans and vegetables. Both these come together in a curry that my aunt used to make during the harvest festival that we celebrate in Southern India called Pongal. It's mostly made in rural areas where the first fist-fulls of all the crops grown by a household and the village are used to make a curry which is offered to the Sun God as a thank you for providing life on earth. This curry is eaten with the "first rice" that is slightly overcooked to give it a sticky, gummy consistency. Since this festival always occurs during the month of January, I've always felt that this was an excellent way to start the year, with a little bit of the best of everything, coming together in a harmonious medley that always managed to explode my senses. This recipe is my interpretation of that nostalgic dish that I associate with festivals, family and cold weather. I hope you try it and enjoy it as much as I do. thelittlecurryball -

Olyaa Kaajuchi Bhaaji (Tender Cashewnuts Curry) Olyaa Kaajuchi Bhaaji (Tender Cashewnuts Curry)
#mysterybox3Olyaa Kaaju Chi Bhaaji is a speciality from Konkan region in Maharashtra. You will find a variety of dishes prepared using these tender cashews in the Konkan region, some sweet, some savoury! With the onset of summers, arrive the tender cashews in the markets.Olyaa Kaaju Chi Bhaaji which is a gravy made from coconut, with very little spices. Again there is no ginger garlic or jaggery used in this recipe, and still the taste is awesome. This is mainly because of the sweet tender cashews which impart their flavour to the dish! I am not highlighting the benefits of cashewnuts here as all are generally aware of the same, and I feel that the deliciousness of this dish is it’s main highlight! Pooja M. Pandit -

Singaporean Fish Head Curry Singaporean Fish Head Curry
#nonindian - This is a very popular Singaporean style Fish Head curry cooked in coconut milk, tamarind water and along with some veggies thrown in. It is best enjoyed with plain steamed rice. I had the privilege of tasting this delicacy at Muthu's restaurant, Singapore, where it has originated. There are a lot of versions to this dish. It is prepared with lemon grass, kaffir lime leaves, chinese cabbage in the Chinese style and in the Malay version, prawn paste and galangal are added. But one thing is for sure, whatever way it is cooked it is just awesome. Bethica Das
