80 California Farm Leek in Paprika Sauce

Great way to get kids to try vegetables, and grown ups eating this appetizing dish. Smooth creamy mild sauce with paprika powder, ready under 30 minutes.
Cooking Instructions

Bring cup of water to boil. Trim roots and ends from leek. Slice lengthwise, slice in bite size pieces, rinse in collander, drain. Put in skillet, pour boiling water over, bring to boil, 10 minutes, pour into collander, drain.

Melt 2 Tbs butter in skillet, add 1 Tbs flour, stir till smooth. Add cup of cream or milk while stirring. Add paprika powder and pinch of salt, stir till creamy pink sauce. Put leeks in individual bowl, pour sauce over, sprinkle with ground black pepper, serve. Enjoy.
