A delicious and easy winter recipe that everyone loves, and most importantly, it’s warming.

Rinse the lentils well. In a pot over the stove, add the lentils and cover with water. Cook until the lentils are about halfway done.

In another pot, heat the olive oil and add the sliced onions with a pinch of salt. Cook over medium heat, stirring occasionally, until the onions turn golden and crispy.

Once the onions are golden, remove half and set aside. Let the remaining onions cook until they turn a deep brown. Add the washed and well-drained rice to the pot and stir with the onions. Add salt, then add the lentils along with the water they were cooked in. Adjust the salt and water as needed. Cook over high heat until the water is absorbed, then reduce the heat and cook until the rice is fully cooked.

Serve the mujadara hot, topped with the reserved onions. It goes well with a green salad and pickles. Enjoy!
