Chicken Schnitzels with Green Beans - Fast, Tasty, Worth it

These little chicken schnitzels are definitely a recipe that runs on my side of the family. I remember my nonna (grandmother) and my making the schnitzels in these batches fit for kings. They were always so tasty, so juicy, that we would take turns distracting my mom or nonna so we could nick one or two before the meal started. Happy memories and one of the very first dishes I learnt to make. We all serve it with different sides, like salads, roast potatoes or even just as a sandwich. A personal favourite of mine is with green beans sauteed in butter and garlic.
I adore this dish for other reasons too. As someone who suffers from chronic pain, I can find it hard to motivate myself to cook. This dish is so simple and easy that very little technique is required. Making it great for people with weakness and fatigue. Plus, if you are a beginner, it is a fantastic way to get into cooking without jumping into the deep end.

The first step is to prepare the chicken breasts. In a bowl whisk the egg with the milk until well mixed through. Now take your chicken breast and place it in front of you lengthwise. With a large knife, slice the chicken breast horizontally to make thinner breast pieces. Do this with each breast.

Put them into the egg and milk mixture once you are done slicing the breast. Allow to sit for 30 minutes on the counter, covered. You can also cover and let rest overnight in the fridge.

Now that the chicken has rested you can prepare your pan and breadcrumbs. In a flat-bottomed bowl, or something similar, add some of the breadcrumbs. This will be used to coat the chicken before shallow frying.

Put oil in a large pan, about halfway. Place the pan on the stove, on a medium heat. You want the oil to be hot but not extremely hot so that you get more splatter than cooking. Test the oil with a few breadcrumbs. If the crumbs start to sizzle, then you are ready to go.

Once the oil is heated you can begin cooking the schnitzels. From the egg mixture take the chicken piece and place it in the container with the breadcrumbs. Get the piece coated as well as you can and then add it to the oil. You will likely want to turn the chicken piece around two times, until it is golden brown

When the chicken piece is done place it on a paper towel to catch the excess oil. Continue doing this until all the chicken is done

When you are about halfway done with your chicken you will want to start with your green beans. Out the green beans in a pan with about 1-2 tablespoons of water and place it on a medium to low heat on the stove. Cover and allow to steam for about 3 minutes.

Remove the cover from the green beans and let most of the water evaporate. While that happens, you can slice up the garlic.

Add a bit of butter and the garlic to the green beans, allowing it sauté for about 3 minutes.

Remember to keep on with the chicken as the green beans are cooking.

When the beans are done your chicken should be ready as well. Serve with a wedge of lime or lemon.
