Kosai is a popular food in arewa( northern Nigeria). We have many roadside vendors selling it in the mornings and evenings. Most households prepare it daily during Ramadan as an accompaniment to kunu (gruel).

Steps

Dehusk and wash beans. Clean and cut your tattase, attaruhu and onions.

Blend your beans with the vegetables to get a smooth paste.

Beat the beans paste thoroughly with a wooden spoon till it is soft and fluffy. Add salt to taste.

Heat vegetable oil in a frying pan. Scoop the beans paste into the hot oil. Fry over medium flame. Flip over and fry the other side

Drain in a colander to remove excess oil. Serve with kunu, or custard.
