Ma’moul (Semolina cookies) 🥮🥮

Ma’moul cookies are my favourite ones with dates filling. I like to add some almonds and walnuts along with dates, to double the taste.
My last recipe doesn’t calls for yeast, this time I searched more n more and found yeast in most of the recipes ( but personally I am going to prefer without yeast one).
This was one of my favourite recipes from my Kitchen, learnt in 2021- welcoming 2022 with this luxurious treat 😍

Ma’moul cookies are my favourite ones with dates filling. I like to add some almonds and walnuts along with dates, to double the taste.

Mix together the semolina, oil and butter. I used my homemade clarified butter. Mix well, cover and keep for at-least 4-6 hrs or overnight. I keep it for overnight.

Make yeast mixture and rest it for 10 mins. Meanwhile mix all the dry ingredients to the semolina-butter mixture.

Now add all the wet ingredients and mix everything well till the dough gets smooth. Allow it to rest for 1-2 hrs.

Meanwhile make the dates paste. Mix all the dates dough ingredients in a chopper or just by hands. Make balls of 1 tsp dough.

Now take 1 tbsp dough and make balls. Then flatten the dough and fill it with a date ball. Make a ball of it again.

Now use the cookie puncher to make the shape. Keep in freezer for 8-10 mins then bake in preheated oven for 15 mins. I have cooking range, so I keep for 10 mins on bottom flame and 4-5 mins on upper flame.
