Ingredients

  1. For the meatball mix
  2. 2 lbsground chicken
  3. 1.5 tspsalt
  4. 2 tspminced garlic
  5. 2 tspchopped green onion
  6. 2 tbspdiced green pepper (any non spicy green pepper will do)
  7. 1/4 tspchilli powder
  8. 1 cuppanko breadcrumbs/any breadcrumbs
  9. 1egg
  10. 2.5 tspoil
  11. For the gravy
  12. 2 tspoil
  13. 1 cupdiced onion
  14. 1 tspeach garlic and ginger paste
  15. 1 tspchilli powder
  16. 1/4 tspturmeric powder
  17. 1/4 tspcumin powder
  18. 1/2 tspgaram masala
  19. 1/2 tspcoriander powder
  20. 1 cupsliced tomato
  21. 1 cupcanned tomato sauce
  22. 1/4 cupunsalted cashew
  23. 1 tspfish sauce
  24. 3/4quarter cup coconut cream or milk
  25. as neededWater
  26. Optional topping and dressing for topping
  27. 1/4 cupsliced - tomato, cucumber, onion
  28. 1 tsptamarind sauce
  29. 1 tspwater
  30. 1wide bread roll, some melted butter for toasting

Steps

  1. 1

    Step 1- Mix 2lbs of lean ground chicken, season with 1.5 tsp salt
    2 teaspoon minced garlic, 2 tablespoon chopped green onion, 2 tablespoon diced green pepper, any non spicy green pepper will do, ¼ teaspoon chilli powder,1 cup panko breadcrumb and 1 egg Mix everything and set aside.

    Step 2- Wet your hands. It will prevent meat from sticking. Form the meatballs, not too small not too big.These can be baked too at 400F for 25 mins. But I fried them for full flavor.

    Step 3- Heat 2.5 tsp oil on med hi heat. Fry the meatballs for 1 and half minutes per side and set aside. They are not fully cooked. The caramelization around the meatballs will give it a nice crust, flavor and texture. Also we will be finishing off everything in the same pan using the meatball flavor from frying.

    Step 4 -In the same pan heat 2 tsp oil and 1 cup diced onion and cook for 2 mins. Add 1 teaspoon each garlic and ginger paste and cook for 2 mins. Add 1 teaspoon chilli powder, ¼ teaspoon turmeric powder, ¼ teaspoon cumin powder, ½ teaspoon garam masala, ½ teaspoon coriander powder and cook for 2 minutes. Add 1 cup sliced tomato and ¼ cup water and cook for 2 minutes. Add ½ teaspoon salt

    Step 5- add 1 cup canned tomato sauce. Water needs to be added throughout the process as needed. In total I used about 1- 1.5 cup water.

    Step 6- Add ¼ cup unsalted cashew and cook for couple minutes. Add 1 more cup of water. Lower the heat to med low and cook for 7 minutes. Stir a few times, so it doesn’t stick at the bottom. Cover and cook for 5 minutes.

    Step 7- Using an immersion blender, blend everything till quite smooth. If you don’t have an immersion blender, put everything in a blender when cool enough and blend till smooth. You will have to add everything back to the pan again. I wanted the gravy to be quite smooth that’s why all the blending.

    Step 8- Add a splash of fish sauce and three quarter cup of coconut cream or milk. I prefer cream as its thicker.Stir everything till smooth.

    Step 9- I wanted the gravy to be quite smooth so I put it through a fine sieve Stir and push through the sieve, so that we get all the creamy goodness with all its flavor. The gravy shouldn’t be quite thick or thin, which is perfect because when the meatballs are added to the gravy it will thicken up.

    Step 10- In a clean pan add the gravy and bring it to simmer on low heat. then add the meatballs. Stir everything in, cover and cook on low heat for 5 mins. The meatballs are ready.

    Step 11- Simple tangy sauce for the toppings (optional)
    Add a little bit of water to 1 teaspoon tamarind sauce to lighten the sauce
    Mix till smooth, You can make any sauce your choice.

    Step 12- Toppings (optional), Its your choice, whatever your like. Add ¼ cup sliced tomato, ¼ cup sliced cucumber, ¼ cup sliced onion in a bowl and pour the sauce in and mix. Toppings are ready.

    Step 14- Put Some gravy first on the breadroll then the meatballs, lay down the toppings, and there you go.. its ready !!
