Peel the celiac root (I used knife not peeler)

Cut into cubes

Coat with oil and seasoning, I let sit in storage container for about 15 to 20 minutes. Due to I had time to do so. However I know at times that's not an option :)

Add to baking greased baking pan, I used organic coconut oil spray.

Bake for 20 to 25 min. Original recipe called for less time. So I would start checking your root about every 5 minutes after 15 minutes. I also did not toss root either, no reason why just didn't. Turned out marvelous.

Garish with chopped parsley
