I took some leftover tofu and mixed it with some pancake mix!!
The color kind of looked like melon bread, so I made it in the shape of melon bread and make pseudo melon bread.

When you mix the dough with a rubber spatula, it will look floury, but if you properly knead it with your hands, it will come together just fine. Recipe by Chi-zusan

Steps

Combine the tofu and the egg in a bowl and mix with a whisk.

Add the pancake mix and mix with a rubber spatula. Afterwards, knead with your hands till it comes together.

Divide the dough into 4 portions and add the sugar as you like. Next with a knife mark the dough with the pattern that you always see on melon bread.

Bake in a preheated oven at 335℉ (170℃) for 12 minutes and it's done.
