Green Chile Chicken Enchiladas

Ingredients

  1. 2boneless, skinless chicken breasts (cooked & shredded)
  2. 1 tbspoil
  3. 2 can(10 oz) green chile sauce
  4. 1 can(4 oz) diced green chiles
  5. 1/4 tspsalt
  6. 1/2 tsppepper
  7. 1/2 tspcumin
  8. 1 tspgarlic powder
  9. 1 tsponion powder
  10. 1/2 tsporegano
  11. 1(8 oz) block Monterey Jack (shredded) 6-8 flour tortillas (approx 7" diameter)

Cooking Instructions

    Preheat oven to 350

    In large skillet, heat oil on medium heat. Add chicken, seasonings, chiles and 1/2 of a can of chile sauce. Stir.

    Once mixture is warm, stir in 1/2 of the cheese

  4. 4

    Lightly grease a 9x13 baking dish & spread 1/2 can of chile sauce on bottom of pan

  5. 5

    Place large spoonfuls of chicken mixture in tortillas, roll and place in baking dish seam side down

  6. 6

    Pour remaining sauce (1 can) over tortillas

  7. 7

    Cover enchiladas with remaining cheese

  8. 8

    Bake for 15-20 minutes
