Steps

Clean methi by plucking its leaves from stems and wash them well many times and keep in strainer

Peel carrots and wash and cut in chunks, chopped garlic coarsly, prepare all ingredients

Heat sarson oil on high heat for 5mins with 2_4garlic cloves /small roti or bread piece, cook on low medium flame till they are burnt or browned.
than close flame take out bread n garlic. Let oil settle down. This oil gives good flavour to sabzi but you can use any oil or ghee. If using mustard oil then you have to purify it before cooking. - 4
Now after 5mis, heat oil add garlic and zeera, when garlic turns brown add chopped green chillies and cook, add tomatoes.

Add all spices and fry masala than addy1/2cup water and cook till tomatoes are soft and masalay fried.

Add methi and gajar /carrots and mix them and cook on low heat cover it, add little hot water if needed.

Add green chillies and dhania. When carrots are soft and methi cooked well fry them its ready. Add garam masala if you like. Serve delicious bhaji with parathay, chapatti or as I served them with besan ki roti goes well with it.
