In a pan, heat 2 tbsp oil.

Add Mustard seeds, let them crackle.

Add curry leaves. Let them fry.

Add chopped onion and capsicum.

Saute them for 2-3 mins.

Add sooji and roast it for 10min approx.

Take the mixture off the flame. Let it cool down.

Once colled, add yogurt and mix it well.

Add water to get it smooth. (If needs)

Set it aside for 20 mins.

In the meanwhile, boil the water in steamer.

Grease idli mould with oil, and place 1 roasted cashew at the bottom of each mould.

Add eno to the idli mould.

Immediately add the batter and steam it for 4-5 mins.

Check with form to make sure that idli is cooked.

Take the idli out and serve it with Sambhar and chutneys.
