Mixed fried rice for tiffin box

This is also one of my family favourite.
Useful not only for school/ office. It comes handy whenever we are on an outing. We enjoy it the most when we are traveling during the lunch hours.
It is very delicious.
I will share with you this recipe with minimum ingredients as because I like to keep it simple when packed so it will be different than what we make for special occasions or parties.
Moreover this recipe is with eggs but if you are vegetarian then omit it.

Steps

Start by making rice.
Boil water, add raw rice, salt.
As rice is almost cooked add lemon juice and give a very gentle mix. As rice is plumped up and has absorbed all the water. Switch the flame off. Let the rice cool down. - 2
Now heat a wok with oil. Splutter shahi zeera. Add chopped onion. Saute till brownish. Next add fresh green chillies and ginger garlic paste. Cook till the rawness of ginger garlic paste is gone.
Next add the chopped vegetables. Fry them uncovered for some time.
Next add salt and turmeric powder. Mix well. Cover and cook till vegetables are cooked yet crunchy. - 3
Next add the soya chunks and mix well. Add red chili powder and curry powder. Mix well so that vegetables and soya are well coated.

Next add the cooked rice, chopped coriander leaves, mint leaves and garam masala.
Very gently give a nice mix.
Let it be on slow heat for sometime. - 5
Side by side, heat oil. Put egg mixture having eggs, salt, turmeric powder, red chili powder, garam masala and milk.
Scramble it into bits. - 6
Put the scrambled eggs into the prepared fried rice. Give a nice yet gentle mix.
Now switch the flame off.Mixed fried rice with vegetables and eggs are ready to get packed in the lunch/ tiffin box.
Have with mint coriander raita...it's awesome!! - 7
